Cars lack color because car makers don't sell to car buyers, they sell to car dealers. Car dealers have a better chance of selling a neutral car to someone who wants a colorful car than they have of selling a colorful car to someone who wants a neutral car. So car dealers order neutral colors.
You're right, but there's more to it and it has to do with paint technology.
