Cars lack color because car makers don't sell to car buyers, they sell to car dealers. Car dealers have a better chance of selling a neutral car to someone who wants a colorful car than they have of selling a colorful car to someone who wants a neutral car. So car dealers order neutral colors.
You're right, but there's more to it and it has to do with paint technology. Check out this article, it does explain things better than I could.
