Bikes: 2016 giant advanced carbon disc bike ,w HED belgiums,dt swiss 350 hubs, all new ultegra drive train etc

I see as I have a lot to learn about wheel upgrade , it's just that the lbs guy says that the Seca surfas survivor series are a better tire for my weight and durability ,so I went with them ,. I don't really under stand the rotating weight part willibird?? As another person posted the handle bars and seat post are heavy does that much weight drop make a difference , ?? At my weight I don't think lighter would be safer,, I see engineers buy stuff here at work that's lighter n it breaks more often than not ...guess I'm going to keep my defy 3 a n d just do minor things to it I guess , and mostly just keep riding to get better . Lots of the guys I ride with just say lighter carbon bikes are better on hills ,so I guess that's what planted the seed about them
Also is there a website where I can get the weight specs off of my defy 3 for each integral part and what other parts that are lighter that I can replace mine with .
With a review of those parts ??
Heck I sweat like a stuck pig and also bring 2 water bottles full of h2o if I could drop 1 of those I'd gain weight off too.... the lbs guy said that my bike has a 2pc crank which is better ,, heck now I'm lost ,
