I've considered rebuilding a road bike wheel with an SA 3-speed hub for my wife. She hated derailleur shifting with friction levers, but she is starting to take to indexed shifting with brifters. I hope this means I won't need to undertake the rebuild.

I'm wondering what benefit the OP wants to gain from the conversion, especially on hilly terrain.
