One of those other shops may have been the bicycle exchange in Wichita, ks (I imagine it has no connection with the other shop). Definitely the largest selection of any bike store in that city, people seem nice enough too, though I'll admit I haven't dealt with them much. They also have a second smaller shop, which they call their "recycling center" or something like that. Basically a place to sell all their trades...went there a month or so back and was surprised to find some pretty decent vintage stuff.
My favorite shop around here is probably Apostle bikeworks in Wichita. Fairly small shop, but the owner helped organize a four race gravel grinder series here last spring which was a lot of fun. Where I live, its a drive to any bike shop but if I needed some work done I couldn't handle I'd go there first... I'm happy to support someone who gives back to his customers like that.
