You can do it either way but I think my favorite is counter-clockwise. Up Big T to AF, left then there is water at the firestation before Upper Big T. Over Mill Creek summit to Aliso Canyon to Acton and the Acton market for food/water. I usually take Soledad back to Sand Canyon which turns into Little T. It's about 73 miles with 7300 feet of gain. Great ride.
