Since a bike with a front der and multi rings is designed to allow the chain to shift/derail off the rings it should be no surprise that it does. The der cage acts as a chain guide. Remove it and the guide is gone. BITD when rings had tooth profiles which weren't shifting specific and chains didn't have side plate shaping to facilitate shifting what you're thinking of doing was a lot easier less likely to result in frequent chain drop.
