You could certainly mask off the brake surface, and just paint the spider of the disc brake. But that wouldn't show up much with very little spider, and lots of braking surface. Perhaps use some high temperature stove and chimney paint.

No reason not to paint the callipers different colors.

Or, perhaps just use pretty colored bolts to hold the discs to the hubs.
