If you're looking for gumwalls specifically, I recommend the Continental Gran Prix Classic. 180 TPI at about $40 a pop on Wiggle. More of a brown wall than gum, really, but an awesome tire.
I kind of looked into those... was going for more of a tan wall look... I'll keep these in mind though.
That's a beautiful bike too. Makes me want steel!
