I've spent a bit of time on those Edinburgh cobbles. They can be nasty. Mine was all on a Dutch city bike (Workcycles Omafiets or Opafiets depending on the day) and was quite tolerable. The things that I think made a difference are (in order): proper and forgiving geometry, big tyres, comfortable seat, slightly low air pressure. Finding the right line on each street also helps a lot. There was one stretch going towards Waverley from Grass Market where I would take the pavement.
Pic of your bike? What size tyres? what seat currently on it?
I have a Lepper Primus saddle on my Gazelle, and can ride over cobbles, railroad crossings, root heaved, and expansion joints with the slightest hint of a bump. The down side is it weights almost 5 lbs.
