I hear you. But there are two barriers, in order of importance:
1. Intervals suck. I know they are good for me, but they still suck.
2. Even if I wanted to do them, I would probably have to do them on a trainer if I only have 1 hour of free time. Getting ready for a bike ride, getting on the bike, doing the workout etc. is not going to happen in 1 hour. I hate indoor trainers.
I find them oddly addictive. Doing them on the road is good, because it gives you a chance to practice producing power at a specific target despite undulations in terrain. But the trainer is awesome too because you get to hit your targets exactly and train your mind what "X" effort for "Y" duration will feel like. I think half of what you're doing when you are training (whether on the road or trainer) is convincing your brain not to panic and make you stop, the brain gets all this rather alarming physiologic feedback when you're riding intensely and thinks there's some kind of dangerous thing going on, it tries to shut you down. But if you just keep going, your brain realizes that you didn't die from a 105% FTP effort and it lets you to do it next time without as much protesting.
But if you don't like intervals, you don't like intervals. Obviously ride your bike however makes you happy.
