Newby question if I may...

Hello, I am new to this forum but not new to bikes, so I know a little bit. I am confused about wheels and I'll get to my question after a few specs. I have an '03 Fuji Finest AL 8sp that I love. I am running Ritchey Pro D's OCR wheels, and I want to upgrade these to a lighter more modern set. Now to my question. A lot of the wheels I like (Fulcrum, Mavic etc) tend to have 11 speed compatibilities. Is there any way I can convert a wheel to an 8 speed compatibility? Say take an 11 speed Fulcrum Racing Zero and convert it to an 8 speed wheel? If so, how? I've seen folks upgrading the speed to higher, not many go lower. I just don't want to change my groupset as it works for me. Thanks in advance! Sorry so winded and elementary.
