Below 40F, I switch to a hooded windbreaker and wear the hood under the helmet. I've inherited a decent crop of hair for insulation that works down to maybe 10-15F in conjunction with the wind break. Below that, I add a rather thin wool beanie and that's good down to maybe -5 to -10F. Below that, I seem to have lost interest over the years.
