Bikes: 2016 Surly Cross Check, 2019 Kona Rove ST

First single speed road bike gearing

Been riding a single speed 29'r mountain bike exclusively for about a year or so, and would like to add a ss road bike to my garage for those times when I can't get to the trail. I live in the foothills near the mountains in SoCal so there's a lot of climbing involved(on the trails and the road--you can't escape it). I run my mountain bike gearing at 32x20 and it works well for me around here (plus I'm getting stronger all the time).
I'm looking at a 2015 Kona Paddy Wagon which I can get a great deal on--it comes stock 42x16. Would that be a good gearing to start off with for a ss road bike in a hilly locale?
