Not many, that is a labor intensive process. The main issue with processes that involve so much manual labor is consistency, which is where quality control comes into play. Different brands probably have different tolerances of what is acceptable and what isn't.
BTW, calimtb, that video has an answer to your question: Nine hours of labor and sixteen workers involved to make that particular frame.
That's not a very precise answer.
As for Project California:
At 2:16: "maybe all you have is
one to two engineers"
At 2 min, 26 sec "this is actually made by hand by the (one or two) engineers"
At 3:16: "we don't have that many engineers (one or two)...they can make one frame a day or something like that."
