If you want a tire close to the size of 700x35, you'll probably need an endurance geometry or a gravel grinder/adventure bike.

You've been given a lot of good brands. Go out and test ride them. That's the only way to find out which one fits you best. And fit should be the major factor in what you decide to buy between the different brands (e.g. Fuji, Specialized, Trek, Cannondale/CAAD, Felt, Giant, Scott, etc.).

Groupsets can also be a factor. 105 is the lowest of the 11x2 groupsets, so it is easier to upgrade to Ultegra/DA from 105, but it's not too much more difficult to upgrade from Tiagra (10x2) or Sora (9x2). I doubt if you'd want to drop below these groups, but Claris (8x2) isn't too bad, either. You will probably want to stay away from Tourney, though.
