I didn't list shirts as I'm not sure what are the best to take. Wondering if I should do cycling jerseys or another type of shirt on the bike?

I have lots of jerseys and bibs from road cycling and not much in the way of dedicated touring clothing. I do have some under armour type shirts and one of those Columbia vented, long sleeve, fishing shirts.

You seem to have quite a few redundancies in your list, I'd ditch the extra pumps and what not, especially for such a short tour. And I never use jerseys, I usually wear fast-drying high-vis construction shirts.
