I do the same. Making adjustments in stem height is marginally easier with quills, but swapping out different length stems is basically impossible without a removable face plate. And if you need a quill stem that does have a removable face plate, your options are severely limited. My bike with the threaded setup is more for casual riding, so I'm not as concerned with making minute fit adjustments on it. For a bike used for more competitive/serious riding though, I think the freedom for easy adjustment with threadless is nice, especially considering that your desired fit can change over time. And IMO the right threadless setup can look just as clean and elegant as any quill.
