Wider tires can handle a heavier load, and/or run at lower pressure for the same load. It will be more comfortable, and trust me you want comfort. I'm not so sure about puncture sealant. Don't have any goatheads around here. Gatorskins seem to be popular. You may want to think about 1 3/8ths tires for touring.
