Neither one of those chainrings will work on your crankset because the Sram S100 is 130 bcd and proper track chainrings are 144 bcd.

Formula hubs are totally fine. The bearings may eventually crap out (like any sealed cartridge bearing hub) and can be easily replaced so that's a non-issue.
