Thumb shifters like these: Amazon.com : MicroShift Flat Bar Double/Triple 9 speed Thumb Shifters : Bike Shifters And Parts : Sports & Outdoors
have indexed/friction rear and "micro-indexed" (ratchet) front which will allow trimming. Not especially cheap but they will do what you what.

Of course friction/ratchet thumb shifters are non-indexed so are naturally trimmable.
