The weight difference isn't as much as you think because tubeless tires are heavier than conventionally tubed ones due to their airtight liner layer and the required sealent adds still more weight. Also, yes, you can put a tube into a punctured tubeless tire but it's a very messy job because of the sealant in the tire and will be no fun at the roadside.
