Quick answer to OP question: I've used Panaracer Paselas for the last several years and liked 'em fine.

It's a double edged sword. There's a myriad of widths offered for ISO559 and ISO622, and really just one common width offered for (the old, once common but now rare) ISO590 and ISO630. In the USA, however, ISO590 and ISO630 are ~still~ sold at more retail locations (bike shops + big box stores, hardware stores, dry good stores, etc.) nation wide than ISO622 because they only have to stock one size to satisfy their customers. For all ISO559 and ISO622 customers, they'd have to stock a half dozen different widths.

I'm not advocating ISO590 or ISO630 tires for touring, but it's for the above reason they're still at least viable for touring in the USA. Lacerate your tires in the middle of nowhere? Alkali Gulch General Mercantile can most likely fix you up with ISO630s.
