What you want to do might be possible with rim brakes but would require a brake and derailleur adjustment each time - assuming your derailleur has enough adjustment. I don't see it working with disk brakes. You can't assume the difference is symmetrical.
I just changed a MTB 7 speed hub to road. The difference was all in the non drive side spacers. The rim on that hub would have been 4.5 mm too far to the left.
