Both the caad8 and caad10 are race specific bikes, so they have fairly short head tubes. If you look for comfort (or you have concerns about your flexibility), I'd suggest to get the synapse (what is an amazing bike also).

In general you can look at the "stack" of the bike in the geometry tables. Higher the number, the more upright/comfortable position can be achieved. Obviously you can move the handlebars up with a stem, but it's better to pick the right bike.
