Depends how old the wheelset is. Newer RS10s are 11 speed compatible. Older ones are not. Good way to check would be to take off the cassette and see if there's an extra spacer in there, which would be needed to run a 10 speed cassette on an 11 speed hub.
Actually, I think the new (11-speed) version is called RS11. Shimano also offers a slightly cheaper RS010, which more closely resembles the old r500/501 (but in 11sp). I don't know that any RS10's are in fact 11-speed compatible.
