My worry wouldn't be a stray bullet; it would be a purposely misdirected bullet, loosed by a drunk who can't tell a cyclist from a running deer at a little distance.
There's a reason so many national parks and "wilderness preserves" throughout the country are closed to cyclists and pedestrian tourists during deer season. Can't blame anyone who chooses to sit out a week or two rather than commuting through a heavily-hunted area! I toured through PA and VA during deer season, and had a couple of scary moments. I'm sure I was perfectly safe, but I moved away from Yonkers a long time ago, so I'm no longer used to hearing gunshots all day long
