A dropbar offers way more positions. Typical reason owners want to convert is...riding position too aggressive.
Best scenario if drop bar bike too aggressive? Put on Craigslist and buy a new or lightly used endurance road bike with friendlier riding position.

A stem with more rise / less reach is almost free, and a new fork with an uncut alloy steerer for more height still much less time and money than getting a new bike.

Either will produce a less aggressive positions than a flat bar with the same stem and fork.
