The only problem with 360 video cameras is implementation. That will be resolved. The software and data will be resource intensive, but that's resolved by horsepower.

At the moment there are a few short videos by Nikon featuring mountain bikes, and the resolution appears good -- by my ISP and laptop can't handle the 1080 or better stream.

There are also some user submitted videos taken with the Ricoh Theta S featuring action pistol shooting, but the resolution is really poor. So while you can watch and scroll around easily, the resolution is so poor it's impossible to see whether the Theta resolves enough detail to record license plates.

The helmet mount isn't an issue. For most recording purposes there's not enough blocked to matter.
