As far as crank and rear derailleur compatibility, so long as you plan on running a 52/40 double and a normal 'road' cassette (not a wide range 11-32/36 or higher MTB cassette) you likely won't find a road rear derailleur worth buying that
won't work for you and a 7/8/9/10 speed cassette. If you plan to run an 11-28 cassette, you might run into the case where the jockey pulley won't clear the 28T cog requiring a longer b-tension screw, or flipping it around. If you want to run a wide range cassette, you'll need a 9 speed or earlier MTB rear derailleur. You can use a medium cage with your double versus the extra long cage RD required for a triple crank and wide range cassette but the longer cage won't hurt anything other than looks.
I have a pile of parts off similar bikes that I'd be willing to part with for a reasonable offer if you don't feel like digging at the bike swap, but I also know the fun of 'scoring' a deal at a swap.
I'm pretty happy with the deals I'm hunting down. Happy enough to not wait another 5 weeks for a bike that makes me feel all fuzzy inside, anyway (I mean for the swap, but also for the parts offer too I guess. Thanks, though).
I'm thinking of risking an 8-speed 11-28 cassette, but I think I can get it in 11-26 for roughly the same price. The 105 RD I picked up seems to have a medium-ish cage, but I'm not too sure. It was longer than 3 DAs, an Ultegra, and another 105 they had, anyway (it's RD 5701).
