The part in most critical need of replacement is my Shimano UN-51 bottom bracket. It's rusted to hell and easily has over 15,000 miles on it. The Shimano XT BB-70 seems wildly popular, at least among the MB community. Is there any reason it wouldn't be suitable for a touring rig?
