I think DA7800 with the 5 arms and rings replaced with more traditional looking ones is as modern as I'd go for a retro rebuild with Shimano - and I am doing so. Maybe 5800/6800 on a frame where it doesn't stand out as much, like black or dark color frame with black grouppo?
You could probably get a vintage crankset put on some 11sp chainrings, sell your new 105 crankset and come out at basically a wash- I hate the new crankset look as well
