1986 Fuji Touring Series IV or V, 700V upgrade & canti choices

A 1986 Fuji Touring Series iv or v serial # FA501763 (repainted, no decals: mid-fork mounts and down tube shifter bosses) frameset found its way into my bike shed. Plan A is to build it up with bits and pieces (Ritchey triple crank, 8 spd Ergolevers & Campy cassette) I have on hand, including 700C wheels. Can you suggest a canti brake, short cable pull if possible, that will work on this frame with 700C wheels? I've tried about 4 cantilevers, purchased the VO Zeste brake, emailed with Paul at Paul Components, and have yet to find a good solution. Plan B is to build up some 27" rims on some old Hugi hubs, matched to the Campy 8-spd group I have, and use the original DiaCompe 960s - not my favorite brake as no adjustabe tension, no ability change the angle of the pads. Plan C is to use my old SunTour bar-ends shifters and the Diacompe long pull brake lever with some other long pull canti on the 27" or 700C wheels. Any help on which canti brake works well with long or short pull levers on 27" or 700C rims would be much appreciated.

The ideal canti brake would: allow pads to fit square to the rim, have adjustable spring tension on each arm, have adjustable toe-in, and fit Koolstop salmon pads.

I have an all-original 1980 Fuji S12-S LTD that I plan to ride for the Paso Robles L'Eroica in April. Riding the S12-S LTD, actually a S18-S LTD as it came with a Fuji branded triple, got me interested in the Touring Series and then I thought why not build one with more modern components and see how that works as a grocery getter and post office package hauler.

Regards and thanks
