My first mod on any of my bikes is the general cockpit area. I'm not really comfortable on drop bars, so I've always immediately done chop and flop. I know, it's silly but I like the bullhorn look
anyway, it looks like that won't be a huge problem since you are getting a hybrid, but handlebars are cheap and infinitely customizable. Plus, it sometimes forces you to replace/modify housings and all that, which can go a long way for bike aesthetics. I prefer tighter cable runs than most shops put out, yes I lose efficiency but oh well, I'm not racing.

this is my current bike the day after I got it with original drops. Sorry it's hard to see, but is the only pic I have.

Then after doing the bars. Decided to try a semi-aero cable routing under the bar tape, and I really like how the cables are now more hidden and a bit cleaner. Anyway, a fun morning of bikey time! Have fun!
