For me, it was not only ease and comfort but also safety. When I walked on rocky ground with MTB shoes (that's a part of my touring style), the cleat would too often slip on a rock. When those shoes wore out, that's one of the reasons I did not replace them.
I also liked living with one less pair of shoes in my closet, but that's a different minimalist story of doing more with less.
