If you are traveling solo and like one pot meals I can recommend
Enertia Trail Foods. I have used them on stretches of the Long Trail, Cohos Trail and an uninhabited 3 day stretch of Hwy 389 in Quebec. They were a stand alone company when I first encountered them, then they were acquired by Coleman and then just disappeared from Coleman's list of products. They are returning according to their website:
Home They are superior to other trail foods, IMO, because they are dehydrated rather than freeze-dried. There is still some texture once they are reconstituted and have a lot of flavor without being overly salty, etc. I do hope they are able to get back into business. At any rate there are still some places that are selling the last lots of their food. It's worth checking them out if and when they are available.
