As for "what's the difference" between pads... Some pads grip better than others, particularly in different conditions (wet/dry). Some are better at not collecting embedded aluminum shavings and grinding your rims. Some are better at not squealing.

In general, Kool Stop makes great brake pads. There are other good pads out there as well, but it's hard to go wrong with Kool Stops.
