What groupsets/wheelsets for what frames?

I have a dilemma. I have too much crap. I'm sure most of you on this forum share this dilemma. Currently, I've got 4 framesets and 4 sets of nice wheels, and 4 group sets, but I don't know exactly where they should go. Let me describe them to you:

Wheel sets:
Open Pro black rims with Dura Ace/Via hubs.
Open Pro silver rims with Ultegra 6600 hubs
Velocity A23 rims with Sora 3500 hubs
Matrix Iso II on 105 hubs

Group sets: (these are all modern, so please hold your noses and bear with me, C&V crowd
Ultegra 6500 mixed color 50/34 compact with 11-30 cassette
Ultegra 6600SL Ice Grey with 50/34 compact and 11-28 cassette
Ultegra 6603 Silver Triple with 53/38/30 crankset and 11-28 cassette
RX100/Sora 8 speed mixed groupset with either a triple/compact double/standard double (I have lots of pieces to complete this one).

Frames
82 Trek 730 double butted full 531 (likely my "fast" road bike and the bike I'll ride up to 100 miles on)
85 Cannondale ST400- currently my commuter-
91 Trek 700 Multitrack (straight gauge cromoly)
90 Schwinn Criss Cross (double butted True Temper) - either the Trek 700 or this Schwinn will be my gravel/29er/bad weather commuter

The A23 wheelset will go on either the Trek 700 or the Criss Cross, as its the closest to a cross wheelset that I have, but as I haven't ridden either frame (since they were unrideable when I got them) I don't know which one would be better for my gravel/single track/bad weather commuter duties

Otherwise, I'm open to any suggestions for group sets. If you don't like any of these options, feel free to say so as well

PS Yes this is the vintage forum, and I have several other frames that stay vintage, like my 90 Cdale Crit and my 82 Windsor. I do like STI on bikes I ride a lot, and I love vintage frames.
