Clipless pedals: if your gf is already comfortable with clipless pedals, great. Otherwise, might be a good idea to install a pair of platform pedals while she gets used to the bike.

Downtube friction shifters: again, if she's not used to those, spend some time with her on the bike somewhere away from hills and traffic so that she can practice shifting.

As noted by someone above, it does look like a long stretch to the bars and brake levers. Unless she has short legs and a long torso, I'd push the saddle forward (and adjust it so that it is level; the nose is tilted down in the picture). Also, rotating the handlebars up a few degrees (or untaping the bars, moving the brake levers up a bit, and then retaping) might help.
