2 hr is enough to ride up to Torrey Pines/Del Mar and back - Torrey Pines is an infamous hill on the Amtrak century.

Also you could ride the tour of california route, up Honey Springs Road

Cant help much on the shops.

you should have perfect weather, clouds in the morning, 70 in the afternoon
