You can't really mix 10 and 11, you'd have to move the cassette, but a true 10 speed hub won't usually fit an 11 cassette.
Other way around is ok though.
I wonder if the frame material has anything to do with the noise. My Guru is steel and is pretty similar to my Masi (AL) with Dura Ace. Not quite as quiet but close.
Pretty much what I thought about the 10-sp/11-sp swap.
