I go through a ton of coffee, and for the most part I'll put the empty cup down and then go get on the bike. The one exception is a long organized/charity ride. I generally skip the first pit stops, and a couple of cups of coffee are gong to make me stop. So I take drink a Stacker 2 about 2 hours before, and then one about half an hour before I start.
