This is exactly what I would do and am currently doing now. I weigh just around 135 lbs. I doubt my build is going to just DESTROY wheels and components so I expect them to probably last a long time. I paid just around $800 from Performance (with points back on their card that paid for fenders, pedals, and part of my panniers).
The Specialized AWOL is about $1350-$1500. That's a TON of savings that could essentially fund a tour, put away in savings for future fixes and parts, etc. The Fuji is a fantastic bang-for-your-buck bike and an excellent value. The issue is finding one in stock. They're sold out everywhere it seems.
+1 to Fuji for the lack of decals as well.
