First question is what will the FX frame accommodate. Unlike the DS, Trek doest make a point of saying what it will accommodate up to so you'll have to go by what other FX riders have already tried etc.
That said, Kenda is now doing their Small Black Eight in a true 700 size, in x32 and x35 (better than before when all we could do is do the 29x1.9 and hope it fit). Make you feel like you have knobys when on the trail but still rolls half decent on the pavement.
I had small block eights about 5 years ago and they were incredible. Mine were folding and very light. I had 700 x 32mm
I'm currently using Bontrager H5 and can't fault their grip. They are freekin heavy though. 700 x 32
