New to bikes! Introduction and a couple questions

Hello Everyone,

I am new here as I only recently became very obsessed with old bikes. I went from having none to 3 in just over a week now. It started when my neighborhood had a free stuff day before the city comes for spring cleanup trash removal. A lady down the street from me put out a Raleigh super course mkII for free and I grabbed it. I started looking into it and realized it was pretty cool which led me to craigslist where I promptly found a super course mkI for 60 bucks. I went and bought it immediately. That made 2. Then a coworker told me about a friend selling a bike for 10 dollars which wound up being a Fuji gran sport se so I bought that too. Which leads me to where I am now.

The super course mkII is a little big for me but I can ride it. It was basically in perfect working order so all I did was lube it up and ride. The super course mkI is what I'm currently focusing on and I'll get to the Fuji later. I just spent the weekend disassembling the super course and used oxalic acid to strip all of the oxidation off. It was very effective. Next I polished everything on the bike that was chrome. The frame now looks great. I'm almost to the point where I'm going to reassemble the bike and now I have some questions.

I found a campagnolo gran sport rear derailleur with all of the associated hardware in my fathers garage and I was wondering if it's possible to install this on the super course. I want to make the bike just 5 speeds. Is the derailleur compatible? Also can I get a new chain but preserve the original cassette? What do you guys do about that conundrum? Do you just get a new cassette too?
