Bikes: 2013 Surly Disc Trucker, 2004 Novara Randonee , old fixie , etc

I'd think about a used MTB & perhaps w/front shock. One could add dirt drop bars too. IMHO if there's going to be significant rougher surfaces than a comfy bike is best.
