So, I'd recommend that we encourage them to communicate about their plans, and begin to work along side one another toward their common goal. He and she can begin to address nutrition and lifestyle issues that have driven up their weight. They can walk, swim, do core fitness, take yoga classes, begin ball room dancing, whatever, to improve overall health and build communication skills. They will need these to tour anyway.
He should ride behind her while her fitness improves, too, IMO.
Not just "behind her", though.
Give her a mirror (helmet, eyeglasses, hoods, bar end, whatever).
Pick a route that she knows she can ride, and give her a head start. Tell her you'll give her five minutes.
Then, wait for three.
She'll be fitter and faster than you, in no time.
