I just went 11 speed after running 9 speed for over a decade (both Dura Ace). Yeah, the new ones move to the upper position automatically and need to be trimmed down. In other words, without trim the default is set up for the small cogs on the cassette. It is when you move to the big cogs on the cassette that you need to trim out, ie. "trim down."

Note that on any 11-speed Shimano the front der cable tension is set with the chain in the big/big combo and the shifter in trimmed down from the top position. Get the Shimano instructions, makes it pretty clear how this stuff works.
