My beater bike has a triple mountain crank with the inner and outer cut off....No issues.....BUT it is a single speed.

You should have no problems with it,being that you want to use the center ring.I won't tell it that the other rings are missing.....

You may run into problems trying to use an inner or outer if you couldn't get it centered OK.
