I'd pop some bar ends on there, a gel seat (and a triple crank if there are going to be any hills). Use tires with a low profile ( road-style tread) and keep the air pressure maxxed. Adjust your front shocks to the terrain you expect to encounter, or put a set of shocks on that has on-the-fly adjustability and full lockout, like Manitou R7. You have bosses for two water bottles, so you are all set. With a bike like this, you won't have to worry about flats, and if you hit a chuck-hole while people-watching, you can just laugh at it.
