You have the idea, brakes and washers.

Why not give it a shot and report. If your concern is bolt length that's easy enough to gauge bu noting the gap when the bolt first starts to engage thread. Ideally you'll have 6mm or 6 threads of engagement. I suspect that, given concern over thread depth in the blind hole, Brake makers are not going to be generous in bolt length, but you'll know soon enough.
